One of my earliest memories in the kitchen was wrapping dolma with my mother and grandmother. “Roll them carefully!” my grandmother used to say, while we filled grape leaves with a mixture of rice, beef and spices.

Today, I carry on the traditions my grandmother and mother passed to me. During the holidays I make these wonderful presents wrapped in grape leaves for my entire family. Here at Kalamala.com we promote family customs; therefore, we have a variety of grape leaves to choose from so that you too can have your own dolma wrapping traditions. And if you are not so inclined to make them yourselves, we also offer a variety of pre-made dolma for you to choose from.

Ingredients
500 gr. Ground Beef
2 Chopped Onions
2 cups Basmati Rice
cup Yellow Split Peas (for quick cooking)
2 oz. Dolma Herb Mixture
cup White Vinegar
2 tablespoons Sugar
1 teaspoon Turmeric 8 Oz.
cup Grapeseed Oil
Salt and Pepper
Directions

1. Dissolve sugar in vinegar.
2. Boil rice in one liter of water until slightly cooked, then drain the water and let it cool.
3. Boil split peas in half a liter of water until cooked, then drain the water.
4. Fry onions in oil until golden.
5. Add meat to onions and fry until changes color.
6. Add turmeric, salt and pepper and cook for 15 minutes, turn off the heat and mix them

• 1 cup nonfat yogurt
• 1 cup nonfat milk
• 1 cup of our California Fancy Dates, pitted
• 1/2 teaspoon vanilla extract
• 2 cups ice cubes

Purée yogurt, milk, dates, and vanilla in blender until smooth. Add ice cubes; puree until mixture is thick and smooth. Divide between 2 glasses and serve.
